Copenhagen architect Mette Lind builds by subtraction. We asked her what she keeps, where she eats, and the one hotel she returns to every spring.

The architect who edits before she adds

Mette Lind works from a first-floor room with two windows and almost nothing else. There is a drawing table, a chair she found in Jutland, and a wall she refuses to hang anything on.

"Everything I have designed that I still like, I made by removing something," she says. "The addition is the easy part. Editing is the work."

What she uses

A bar of unscented olive oil soap. Linen sheets washed until they collapse. One good pen.

Where she eats

A basement place in Vesterbro with eleven seats and no sign. She books the same table, orders whatever is written on the card, and leaves before dessert.

The hotel she returns to

A six-room house outside Palermo, family-run since 1974. "Nothing about it is expensive. Everything about it is right."

Who she finds interesting right now

A ceramicist in Gothenburg with no website, and a woman in Lisbon who restores tiles for a living.
